As a result of a multitude of requests, and following the exceptionally positive response to our first cookbook (Andrew's Favorite Soups for Wellness and Weight-loss), Andrew and I have collaborated on a new cookbook designed to make it even easier for all of us to eat well. We answer the most common question we both receive: How can eating healthy be more enjoyable? This book responds by focusing on the foods that all of us know we should eat, but all of us consistently avoid eating because we never learned how to enjoy eating them. Today, I eat a diet rich in vegetables, but it was not always that way. Being raised in Paris, France came with its own set of traditional dietary challenges. Every meal seemed to come with abundance of bread, butter, potatoes and cream-based sauces. Clearly, I would have been better served by being raised in the South of France where the healthy Mediterranean diet has its roots, but we all inherit the diet of our upbringing. And in order to achieve my best health, I would need to overcome the traditional eating habits of a typically Parisian family. Ironically, I have now adopted a more Mediterranean (and Asian) style of eating where vegetables are prepared with healthy spices and herbs to replace the nonnutritious calories of a more Parisian (and American) traditional diet. It was not easy to leave behind those old Parisian ways, but once I learned how to prepare things differently, I not only enjoyed, but preferred the flavor and textures of the healthier foods I prepared. Plus I always would feel better after having eaten them. And once you try just a few of the recipes in this book, I am confident that you will feel the same way. Basically, my goal with this book is to help everyone discover what a pleasure it is both to prepare and eat extremely healthy vegetables like kale, collard greens, Swiss chard, Brussels sprouts, broccoli, cauliflower, cabbage, asparagus and more. These are by far the healthiest of foods, but for most Americans (and even Parisians) only rarely consumed. As Andrew always reminds me, it is impossible to overstate the impact of what we eat (both good and bad) on the current and future state of our health. This easy-to-follow cookbook is intended to provide an opportunity to transform our lives by making foods that protect our health a delicious and normal part of our daily routine. Bon Appétit! Muriel
