Polyphenols are compounds plants make to protect themselves from sun, heat, and other stresses, and the olive tree makes a distinctive group of them. Oleuropein is the main polyphenol in olive leaves and unripe olives, and it gives them their bitter taste.

Can’t I just get these compounds from olive oil?
